Pinot

Pinot is a red wine with DOP Sierras de Málaga, made as a single-varietal Pinot Noir from a very rigorous selection of estate-grown grapes. Production is very limited, around 600 bottles, and it has an alcohol content of 14.0% vol. It is an organic wine, certified both in the vineyard and in the winery.

Vinification is carried out through fermentation with native yeasts, followed by a process of micro-oxygenation and 12 months of ageing in French oak barrels, resulting in an atypical and deeply singular Pinot Noir, marked by the character of the terroir of Ronda.

In the glass, it shows a deep burgundy-red colour, unusual for the variety. On the nose, it presents an intense and concentrated fruity profile, the direct result of its careful production. On the palate, it surprises with its structure and complexity, with a powerful, broad passage and great persistence, breaking with the classic canons of Pinot Noir without losing elegance.
